Purification and Properties of α-Glucodidase from Taro Tuber

Abstract
α-Gulcosidase (EC 3.2.1.20) has been purified 2,500-fold taro (Colocasia esculanta Shott) tuber by a procedure incluting fractionation with ammonium sulfate and ethyl alcohl, CM-cellulofine column chromatography, and preparative disc gel electrophoresis. The enzyme readily hydrolyzed maltose, nigerose, malto-oligosaccharides, and soluble starch. However, the enzyme hydrolyzed isomaltose only very weakly. The Km values of the enzyme for maltohexaose and soluble starch were lower than that for maltose.
